    Lemon Noodle Kugel

    * 5 cups uncooked egg noodles
    * 2 tablespoons butter
    * 4 eggs
    * 2 cups (16 ounces) sour cream
    * 2 cups (16 ounces) 4% cottage cheese
    * 1 cup milk
    * 3/4 cup plus 1-1/2 teaspoons sugar, divided
    * 1-1/2 teaspoons lemon extract
    * 1 teaspoon Spice IslandŽ Pure Vanilla Extract
    * 1/2 teaspoon ground cinnamon


    * Cook noodles according to package directions; drain and return to the pan. Toss with butter; set aside.

    * In a large bowl, beat the eggs, sour cream, cottage cheese, milk, 3/4 cup sugar and extracts until well blended. Stir in noodles.

    * Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Combine cinnamon and remaining sugar; sprinkle over noodle mixture.

    * Bake, uncovered, at 350° for 55-60 minutes or until a thermometer reads 160°. Let stand for 10 minutes before cutting. Serve warm or cold. Refrigerate leftovers.

    Yield: 12 servings.
