    Summer Shrimp Pasta

    28 gulf shrimp, peeled
    2 tbsp plus 1/4 cup olive oil
    1/2 eggplant, sliced 1/2 inch thick and quartered
    1/2 cup red onions, slivered
    1/2 cup chopped tomatoes
    1 cup bottled artichoke hearts, quartered
    1/4 cup diced kalamata olives
    1 tsp dried oregano
    1 tbsp chopped garlic
    salt to taste
    cooked pasta for 4
    Feta cheese for garnish


    \Heat the oven to 350 degrees and roast eggplant until soft.

    Heat 2 tbsp olive oil in saute pan large enough to hold all the ingredients.

    Add all ingredients except garlic and pasta and saute until shrimp is cooked through.

    Add the rest of the oil and garlic and cook for two minutes.

    Add the pasta and toss. Top with feta cheese.

    (Makes 4 servings)
