    Chili Cheese Squares

    These are a perfect appetizer for Mexican dinner night

    List of Ingredients




    5 large eggs
    2 tbsp minced roasted green chilies
    1 tbsp chili powder
    2 tsp ground cumin
    3/4 cup milk
    2 cups grated Monterey jack cheese
    1 cup chopped green onions
    2 cups grated cheddar cheese (Low fat works fine)

    Recipe



    Preheat oven to 350ºF. Spray 9-inch square baking pan with cooking spray. Whisk eggs, chilies, chili powder and cumin in large bowl to blend. Whisk in milk. Add Jack cheese and onions, and stir to combine. Pour into prepared dish. Sprinkle cheddar cheese over dish. Bake until top is light brown and puffed, approximately 45 minutes. Cool slightly. Cut into 1 1/2-inch squares. Serve while hot.

    NOTES : Can be prepared 8 hours ahead. Transfer squares to heavy, large cookie sheet. Cover and refrigerate. Before serving, re-warm in 350ºF. oven until heated through, about 10 minutes. Place warm squares on platter and serve.
