    1 clove garlic

    3 tablespoons chopped fresh cilantro or parsley

    1 (15-ounce) can chick-peas, rinsed and drained

    2 tablespoons fresh lemon juice

    1 tablespoon olive oil

    1/2 teaspoon salt

    1/8 teaspoon hot pepper sauce

    Assorted cut-up vegetables, pita wedges, or baked tortilla chips

    Recipe



    1. In a blender or food processor fitted with the metal blade, process garlic until minced. Add cilantro and process until finely chopped, about 10 to 20 seconds.

    2. Add chick-peas, lemon juice, oil, salt and pepper sauce. Process until very smooth, about 1 minute, scraping down the sides of the bowl with a rubber spatula as needed.

    3. Place dip in a serving bowl. Refrigerate until ready to serve. Place in the center of a large platter and arrange dippers around it. (Can double as pita bread sandwich filling. Use about 1/4 cup dip and add 1/4 cup EACH finely chopped tomatoes and cucumbers.)
