    Hush Puppies, Baked

    Recipe Introduction


    From "Healthy Meals in Minutes", 1995. These hush puppies are baked, not fried. They are lower in fat and calories than the classic Southern variety.


    List of Ingredients


    • 1 cup yellow cornmeal
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 1/2 tsp paprika
    • 1/2 cup skim milk
    • 1 egg white
    • 1 tbsp canola oil


    Instructions


    1. Preheat oven to 425 degrees. Spray a baking sheet with vegetable spray.

    2. In a large bowl, combine cornmeal, baking powder, salt and paprika. Mix well.

    3. In a small bowl, whisk together milk, egg white, and oil until smooth.

    4. Add milk mixture to cornmeal mixture. Stir until batter is just combined. Shape into 1-1/2 inch rounds with the help of a spoon. If the batter sticks to the spoon, use another flour-coated spoon to help remove it. Place rounds, 1 inch apart, on prepared baking sheet.

    5. Bake hush puppies until tops are firm and golden, about 10-15 minutes. Serve immediately.

    Variation: Add 2 tbsp chopped green onions, or 1/2 tsp chili powder or 1/4 tsp cayenne pepper instead of the paprika.
