Biscuits, Mashed Potato

1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons chilled margarine, cut into small pieces
1/2 cup plain mashed potato
1/4 cup plain low-fat yogurt
1 large egg, beaten
Recipe
1. Preheat oven to 425 degrees F. Line a baking sheet with wax paper or parchment paper.
2. In a large bowl, combine first 4 ingredients. Mix well. Using a pastry blender or 2 knives, cut in margarine until coarse crumbs form.
3. In a small bowl, combine mashed potato, yogurt and egg. Mix well. Add potato mixture to flour mixture, stirring until a soft dough forms.
4. On a lightly floured surface, pat dough into a 1/2-inch-thick rectangle. Using a small, sharp knife cut the rectangle into 8 square biscuits. Place biscuits, 2 inches apart, on prepared baking sheet. Bake until golden, about 15 minutes. Place sheet on a wire rack for 5 minutes. Serve warm.
HINT: Use a clean spray bottle to spray the tops of biscuits before baking. The water will turn to steam in the oven and produce crisp biscuits.
