    2-1/2 cups buttermilk baking mix

    2/3 cups sugar

    3 eggs

    2 tablespoons grated orange rind

    3/4 cup orange juice

    3/4 cup chopped pecans

    ORANGE GLAZE:
    3/4 cup sifted powdered sugar

    3 tablespoons butter or margarine, melted

    2 teaspoons grated orange rind

    2 teaspoons orange juice

    Zest of 1 orange (optional)

    Recipe



    1. Combine baking mix, sugar, eggs, orange rind and juice in a large mixing bowl; beat at medium speed of an electric mixer 3 minutes. Fold in pecans.

    2. Pour batter into a well-greased 9 x 5 x 3-inch loaf pan. Bake at 350° F. for 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan and cool completely on a wire rack.

    3. To make orange glaze combine all ingredients in a small mixing bowl. Beat at medium speed of an electric mixer until well blended. Use immediately on Orange-Nut loaf or other quick breads. Yields 1 cup.

    4. Garnish glazed loaf with orange zest, if desired. Slice and serve.
