    Pineapple-Pecan Cake

    List of Ingredients




    FOR CAKE:
    2 cups sugar
    2 cups flour
    2 eggs
    2 teaspoons baking soda
    20-ounce can crushed pineapple (undrained)
    1 cup pecans
    FOR ICING:
    1 stick of butter
    8 ounces cream cheese
    1 teaspoon vanilla
    1 cup powdered sugar

    Recipe



    FOR CAKE:
    DON'T USE MIXER, but hand mix the above ingredients and pour in 13 x 9-inch pan. Bake at 350 degrees for 35 minutes.

    FOR ICING:
    Mix above ingredients with blender until smooth. When cake is completely cooled apply icing to cake.
    Top with pecans if desired.
