    1 cup shortening

    2 cups sugar

    3 large eggs

    3 cups all-purpose flour, divided

    1 teaspoon each ground cloves, cinnamon, allspice and nutmeg

    1 teaspoon baking soda

    1 cup buttermilk

    1 (12-ounce) jar strawberry preserves

    2 cups chopped pecans

    1 cup raisins

    Recipe



    1. Beat shortening at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs, one at a time, beating after each addition.

    2. Combine 2-3/4 cups flour and spices. Dissolve soda in buttermilk. Add flour mixture to shortening mixture alternately with buttermilk mixture, beginning and ending with flour mixture. Mix at low speed after each addition until blended. Stir in preserves.

    3. Combine remaining flour, pecans and raisins; toss well. Stir into batter.

    4. Pour batter into 3 greased and floured 9-inch round cake pans. Bake at 350 degrees F. for 30 minutes or until a wooden pick inserted in center comes out almost clean. (pans will be full.) Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks. Spread your favorite frosting between layers and on top and the sides of the cake.
