    ï‚· 4 eggs
    ï‚· 2 large onions, minced
    ï‚· Salt and pepper to taste
    ï‚· 2-1/2 cups hot milk
    ï‚· 3/4 cup grated Cheddar cheese
    ï‚· 1 tablespoon butter or margarine
    ï‚· 1 tablespoon oil
    ï‚· 2 tablespoons chopped fresh chervil or parsley
    ï‚· Margarine, for greasing

    SAUCE:
    ï‚· 2 tablespoon butter or margarine
    ï‚· 3 tablespoon all-purpose flour
    ï‚· 1-1/4 cups milk
    ï‚· 1 cup grated Cheddar cheese
    ï‚· Salt and pepper to taste

    Recipe



    1. Preheat the oven to 300 degrees F. and grease a 1-1/2 quart ovenproof dish.

    2. Beat the eggs and season to taste. Beat in the milk and cheese and pour into prepared dish. Half fill a roasting pan with boiling water and place the dish in the pan. Bake for 1-1/2 hours or until firm.

    3. About 15 minutes before the end of cooking time, heat the butter and oil in a skillet. Add the onions and saute for 5 minutes, until softened and lightly colored. Stir in the chervil; remove from heat. Preheat the broiler to high.

    4. Meanwhile make the sauce: Melt the butter in a saucepan, sprinkle in the flour and stir over low heat for 1 to 2 minutes, until straw-colored. Remove from heat and gradually stir in milk. Return to heat and simmer, stirring until thick and smooth. Stir in half the cheese and season to taste. When the egg mixture is cooked, spoon the onion mixture on top. Spoon the sauce over the onions and sprinkle with the remaining grated cheese.

    5. Broil for 1 to 2 minutes, until the cheese has melted and is golden brown and bubbling. Serve at once.
