    Hearty Hot Dog Bake

    List of Ingredients




    1 medium yellow onion, sliced (about 1 cup)
    1 tbsp firmly packed brown sugar
    4 reduced-sodium, fat-free hot dogs, sliced into 1-inch pieces
    1/4 tsp black pepper
    3 cups mashed potatoes
    1 cup sauerkraut, rinsed and drained
    1 tbsp coarse-grained mustard
    1/4 cup bread crumbs
    1 tbsp unsalted margarine, melted


    Recipe



    Preheat oven to 350 degrees. Spray a medium skillet with with vegetable cooking spray. Heat skillet over medium heat. Add onion and brown sugar; cook, stirring, until onions are softened, about 5 minutes. Add hot dogs and pepper. Cook, stirring frequently, until hot dogs are browned and heated through, about 5 minutes. Remove from heat.
    In a medium bowl, combine mashed potatoes and hot dog mixture. Mix well. Stir in sauerkraut and mustard. Spoon mixture into a 1-quart casserole dish; smooth top.
    Sprinkle bread crumbs over casserole. Drizzle margarine on top. Bake until casserole is heated through and top is golden brown, about 15-20 minutes.
