    Monday Night Casserole

    List of Ingredients




    1/4 pound lean ground pork
    3/4 pound lean ground beef
    1 cup sliced mushrooms
    1 cup frozen peas, thawed
    1 cup frozen pearl onions, thawed
    2 tbsp dried onion flakes
    1/2 tsp crushed hot red pepper flakes
    1 package nonfat cream cheese, softened and cut into 1-inch cubes
    3 tbsp chopped fresh parsley
    TOPPING:
    1-1/2 cups reduced-fat baking mix
    1/2 cup skim milk

    Recipe



    Preheat oven to 350 degrees. To prepare topping, in a small bowl, combine baking mix and milk. Mix well. Set aside.
    In a large nonstick skillet, cook pork and beef over medium heat until browned, about 5 minutes. Pour off fat.
    Add mushrooms, peas, onions, onion flakes and red pepper flakes to skillet. Cook, stirring frequently, for 2 minutes. Add cream cheese. Cook, stirring constantly, until heated through and blended, about 5 minutes. Stir in parsley.
    Spoon meat mixture into a 1-1/2 quart casserole. Spoon topping over meat mixture.
    Bake casserole until topping is golden and filling bubbles, about 30 minutes.
