In a large skillet cook onions, peppers, celery, eggplant and garlic in margarine until vegetables are tender crisp. 2. Stir in cooked rice and the rest of the ingredients except bread crumbs. 3. Turn into a lightly buttered casserole. Top with buttered bread crumbs. Bake at 350 degrees for 45 to 55 minutes. Serves 6
