    List of Ingredients




    2 cups cooked rice

    1 cup EACH chopped onions, green pepper and celery

    4 cups cubed eggplant (1 pound)

    2 cloves garlic, crushed

    4 tablespoons margarine

    2 cups peeled, de-veined raw shrimp

    1 tablespoon Worcestershire sauce

    2 teaspoons salt

    1/2 teaspoon black pepper

    1/2 teaspoon dried thyme

    3/4 cup mayonnaise

    1 cup buttered bread crumbs

    Recipe



    1. In a large skillet cook onions, peppers, celery, eggplant and garlic in margarine until vegetables are tender crisp.

    2. Stir in cooked rice and the rest of the ingredients except bread crumbs.

    3. Turn into a lightly buttered casserole. Top with buttered bread crumbs. Bake at 350 degrees for 45 to 55 minutes.

    Serves 6
