1. Preheat oven to 375 degrees F. Grease a 9 x 13-inch casserole dish.
2. Brown beef in oil 5 minutes. Push to the side and add onions and carrots. Sauté for 5 minutes; add mushrooms and stir everything together.
3. Combine tomato paste and sherry and add to pan with plum tomatoes and seasonings. Simmer for 30 minutes.
4. While sauce is cooking, mix elbows, spinach and Cheddar cheese together. Place in bottom of casserole dish. Top with the sauce and sprinkle with Parmesan. Bake for 35 to 40 minutes.
