Raisin Cookies

List of Ingredients
- 1-2/3 cups flour
- 1/2 tsp apple pie spice
- 1/2 cup margarine, softened
- 1/2 cup sugar
- grated peel of 1 lemon
- 1 egg
- 1 tbsp milk
- 1/2 cup raisins
- Beaten egg white
Instructions
- Preheat oven to 350F. Lightly grease cookie sheets.
- Sift flour and apple pie spice together. Set aside.
- Beat margarine, sugar and lemon peel together until light and fluffy.
- Beat in the egg. Blend in the milk. Work the raisins in with the flour. Mix all to a stiff dough.
- Turn out onto a lightly floured surface. Roll to 1/4 inch. Cut with a 3 inch fluted cookie cutter. Reroll and cut trimmings.
- Transfer to prepared sheets. Prick each cookie in several places with a fork. Brush tops lightly with beaten egg white. Sprinkle with sugar.
- Bake 15-20 minutes, until golden. Cool on baking sheets 1-2 minutes, then transfer to wire rack.
