2/3 cup granulated sugar
3 tablespoons margarine, softened
2 large eggs
2 egg whites
1 cup all-purpose flour
1/2 cup skim milk
1/4 teaspoon ground nutmeg
1 (16-ounce) can pitted dark cherries, drained
1 teaspoon cherry-flavored liqueur or vanilla extract
Recipe
1. Preheat oven to 375 degrees F. Spray a 9-inch quiche dish or pie pan with vegetable cooking spray.
2. In a large mixing bowl, using an electric mixer set on medium speed, beat together sugar and margarine until fluffly. Beat in eggs and egg whites, one at a time, until well blended.
3. At low speed, alternately beat in flour and milk. Stir in nutmeg. Fold in cherries and liqueur. Pour batter into prepared dish.
4. Bake until a toothpick inserted in the center comes out clean, about 45 minutes. Place on a wire rack and cool. Serve immediately.
VARIATION: Substitute 4 large pears or apples, peeled and sliced, for the cherries. Also substitute 1 teaspoon of orange-flavored liqueur for the cherry liqueur.
