This recipe can be served warm, then refrigerated and served as a dessert for lunch, or snack for later. Takes 10 minutes.
3 Cans pinapple chunks
3 cans Mandarin Oranges
3 bananas, sliced, or other fruit of choice
1 package tapioca pudding mix
Recipe
Drain about 2 cups of juice from the cans. Pour this juice into a saucepan and go by directions on pudding mix. The juice takes the place of the milk. It just needs to dissolve and thicken a little.
In the bowl you will serve it in, add the fruit in layers. When the tapioca mixture is ready, pour it over the fruit. Do not stir. Serve warm or chilled.
