Cover brisket with water; season. Simmer for 1 hour to 1-1/2 hours. 2. Add sauerkraut, vinegar and brown sugar. Cook 1 hour longer. 3. Add potato and caraway seed. Cook 10 minutes longer. Yield 6 to 8 servings.
