    Linguine W/Thai Shrimp Sauce

    ï‚· 12 ounces linguine, uncooked
    ï‚· 12 ounces fresh medium shrimp, peeled and deveined, OR 12 ounces small frozen shrimp, thawed
    ï‚· 3 red bell peppers, seeds and stems removed, cut into bite-size, thin strips
    ï‚· 3 scallions, thinly sliced (white part and tips of green part)
    ï‚· 2 tablespoons smooth peanut butter
    ï‚· 1 tablespoon sesame oil
    ï‚· 1/2 cup low-sodium chicken broth or water
    ï‚· 1/2 teaspoon crushed red pepper flakes
    ï‚· 1 jalapeño pepper, stemmed, seeded and thinly sliced
    ï‚· 1/2 teaspoon ground ginger
    ï‚· 1 tablespoon low-sodium soy sauce
    ï‚· 1 tablespoon mild white vinegar

    Recipe



    1. Prepare linguine according to package directions.

    2. While noodles are cooking, combine remaining ingredients in a saucepan and place over low heat.

    3. Cover and simmer until the sauce is smooth and the shrimp are cooked through, about 2 minutes.

    4. When linguine is done, drain well and transfer to a large bowl.

    5. Add sauce and toss gently until well combined. Serve immediately.
