    List of Ingredients




    2 tablespoons olive oil

    1 large onion, diced

    1 teaspoon garlic, minced

    2 carrots, peeled and diced

    2 cups tomatoes, diced

    2 tablespoons basil, chopped

    2 zucchini, diced

    1 cup chicken broth

    2 cups cannelloni beans, cooked

    3/4 pound penne pasta

    1/2 cup Parmesan, grated


    Recipe



    1. Heat the oil in a large soup pot. Add the onion, garlic and carrots. Cook until just soft.

    2. Add the tomatoes, basil, zucchini and broth. Cover and simmer for 10 minutes. Add the beans and cook for 5 minutes longer.

    3. Cook and drain the pasta. Toss in the cheese.

    4. Place in bowls and top with the vegetable sauce.

    Serves 6 to 8
