1. Place the chicken pieces in a shallow dish. Pour the cider over. Let chicken stand for at least one hour. Remove the chicken from the cider, reserving the cider.
2. Mix the flour, ginger, cinnamon, salt and pepper in a small bowl. Dredge the chicken in flour mixture. Place chicken skin side up, in shallow baking dish. Bake the chicken at 350 degrees F. for 40 minutes.
3. Meanwhile, in a small bowl, combine the reserved cider, brown sugar, apples and honey. Pour this mixture over the chicken. Bake at 350 degrees F. for another 20 minutes. Serve at once.
