    6 skinless, boneless chicken breast halves

    1/2 cup onion, chopped

    1/2 cup celery, chopped

    3 tablespoons butter

    3 tablespoons dry white wine

    7-1/2 ounces crabmeat, flaked

    1/2 cup herb stuffing mix

    2 tablespoons all-purpose flour

    1/2 teaspoon paprika

    1 package hollandaise sauce mix

    3/4 cup milk

    2 tablespoons dry white wine

    1/2 cup Swiss cheese, shredded

    Salt and pepper to taste

    Recipe



    1. pound to flatten chicken breasts. Sprinkle with a little salt and pepper.

    2. Cook onion and celery in 3 tablespoons butter until tender. Remove from heat; add 3 tablespoons wine, the crab and stuffing mix, and toss. Divide mixture among breasts. Roll up and secure with toothpicks.

    3. Combine flour and paprika. Coat chicken. Place in a 11 x 7 x 2-inch baking dish , drizzle with 2 tablespoons melted butter.

    4. Bake uncovered in a 375 degree F. oven for 1 hour. Transfer to platter.

    5. Blend hollandaise sauce mix with milk. Cook, stirring, until thick. Add remaining wine and cheese to sauce. Stir until cheese melts. Serve over chicken.

    Serves 6
