    Firecracker Baked Chicken

    1 (2-1/2 to 3-pound) broiler-fryer, skinned and cut up

    3/4 cup mayonnaise

    Tabasco

    1 cup cornflake crumbs

    1/2 cup Parmesan cheese, grated

    Salt and pepper

    Recipe



    1. Preheat oven to 350 degrees.

    2. Mix mayonnaise with Tabasco sauce. Brush chicken with mixture.

    3. In a plastic bag, combine the remaining ingredients and shake to blend thoroughly. Place chicken pieces into the plastic bag, one piece at a time, and shake to coat chicken.

    4. Place chicken in a 13 x 9-inch baking dish and bake for 1 hour or until tender.

    Makes 3 to 4 servings.
