1 (3-pound) chicken, skinned and cut into 8 pieces

1. Preheat oven to 350 ° F. In a medium nonstick skillet, heat oil over medium heat. Add onion; cook, stirring, for 2 minutes. Stir in orange juice, orange peel, tarragon, salt and pepper.
2. Spray a 13 x 9-inch baking dish with vegetable cooking spray. Place chicken in prepared dish. Pour orange juice mixture over chicken.
3. Bake chicken, turning occasionally, until cooked through and juices run clear when meat is pierced with a knife, about 55 minutes.
4. Place chicken on individual serving plates. Spoon sauce over top of chicken. Serve immediately.
