Heat the oil in a saucepan. Add the onion, garlic and mushrooms. Cook until just soft. Add the prosciutto and rice. Cook for 3 minutes. 2. Add the broth. Bring to a boil. Reduce the heat, cover and simmer for 20 minutes (or until the rice is tender). Garnish with the cheese.
