    5 large carrots, grated (about 5 cups)

    1/4 teaspoon EACH salt and freshly ground black pepper

    1/8 teaspoon ground ginger

    FOR THE DRESSING:
    1/4 cup fresh lime juice

    1 tablespoon olive oil

    2 tablespoons reduced-sodium soy sauce

    1 teaspoon Dijon-style mustard

    Recipe



    1. To prepare dressing, in a large bowl, whisk together lime juice, oil, soy sauce and mustard. Add carrots; toss to coat.

    2. Add salt, pepper, and ginger. Mix well. Serve immediately.
