    List of Ingredients




    3/4 pound red potatoes, unpeeled, washed and cut into 1-inch cubes

    1/2 cup EACH diced onion and celery

    1/4 cup EACH chopped sweet red pepper and green pepper

    1/4 cup grated carrot

    1/4 cup diced dill pickle

    1/4 cup sweet pickle relish

    1 (2-ounce) jar diced pimiento, drained

    1/4 cup plain nonfat yogurt

    1/4 cup reduced-calorie mayonnaise

    2 tablespoons spicy brown mustard

    1/8 teaspoon black pepper

    1/8 teaspoon cayenne pepper

    Recipe



    1. Cook potatoes in boiling water to cover 8 to 10 minutes or until tender. Drain and let cool.

    2. Combine potatoes and next 8 ingredients; toss gently. Set aside.

    3. Combine yogurt, mayonnaise, mustard and peppers; stir well and pour over the potato mixture. Toss gently; cover and chill.

    Serves 9 (1/2 cup servings)
