    List of Ingredients




    2 pounds potatoes (6 medium)

    1/2 pound hard salami, cut into 1-1/2 x 1/4-inch strips

    1/2 pound Swiss cheese, cut into 1-1/2 x 1/4-inch strips

    1 cup cooked frozen or canned green peas

    1/2 cup sliced sweet pickle

    1 cup French dressing

    Red leaf lettuce

    GARNISH:
    1 can (2 ounces) flat anchovy fillets, drained and halved

    4 hard-cooked eggs, sliced and

    4 medium tomatoes, sliced

    Recipe



    1. Pare the potatoes and cut into 1-inch cubes. Cook in salted water until just tender.

    2. Combine the remaining ingredients in a large bowl; add the potatoes.

    3. Toss, cover and refrigerate. Remove from refrigerator 1 hour before serving.

    4. To serve, line a large salad bowl with red leaf lettuce. Spoon salad into bowl. Garnish with anchovies, eggs and tomatoes.

    Serves 6
