    6 medium red potatoes

    1/2 pound green beans, trimmed

    1 cup imitation crabmeat, shredded

    1 cup nonfat mayonnaise

    1/4 cup chopped fresh parsley

    1 tablespoon EACH grated lemon peel and juice

    3 cups mixed greens, torn into bite-sized pieces

    1/2 cup sliced canned hearts of palm

    6 medium cherry tomatoes, sliced

    2 large hard-boiled eggs, sliced

    12 ripe black olives (optional)

    Recipe



    1. Bring potatoes to boil over high heat in enough water to cover. Reduce heat to medium and cook until tender, about 10 minutes; drain and cool completely. Cut into thin slices.

    2. Meanwhile, in a large saucepan, bring 2 inches of water to boil over high heat. Place beans in a steamer basket and place in pan. Cover and steam until crisp-tender, about 7 minutes. Drain and chill completely.

    3. In a small bowl, combine crabmeat with the next 4 ingredients.

    4. Arrange greens on a plate. Spoon crabmeat mixture over. Arrange potatoes, beans, hearts of palm, tomatoes, eggs and olives on plates.
