    Spinach-Citrus Salad

    List of Ingredients




    1 medium orange, peeled and sectioned
    4 medium red potatoes, cooked and quartered
    1/2 small red onion, sliced (about 1/2 cup)
    8 cups spinach leaves, trimmed and torn into bite-sized pieces
    DRESSING:
    1 clove garlic, minced
    1/4 cup fresh lemon juice
    2 tbsp olive oil
    1 tbsp reduced-sodium soy sauce
    1 tbsp chopped fresh parsley
    1 tsp Dijon mustard
    1/4 tsp black pepper

    Recipe



    To prepare dressing, in a large bowl, whisk all the dressing ingredients together until blended.
    Cut orange sections in half crosswise. Add potatoes, orange and onion to dressing. Toss to coat. Add spinach; toss to coat.
