    Cold Cucumber and Spinach Soup

    Recipe Introduction


    This has been in my file for years. I don't know where it came from, but it's delicious.


    List of Ingredients


    • 1 bunch scallions, sliced
    • 2 tablespoons butter
    • 4 cups diced cucumbers
    • 3 cups chicken broth
    • 1 cup chopped spinach
    • 1/2 cup sliced, peeled potatoes
    • 1/2 teaspoon salt
    • Lemon juice and pepper to taste
    • 1 cup light cream
    • Thin slices of cucumber, radishes and/or scallions for garnish


    Instructions


    1. Saute the scallions in the butter in a saucepan until softened.

    2. Add the cucmbers, broth, spinach, potatoes, salt lemon juice and pepper and simmer until potatoes are tender.

    3. Transfer the mixture to a blender in batches and puree.Transfer the puree to a bowl and stir in light cream.

    4. Let the mixture cool and chill it for several hours.



    Final Comments


    Serve in chilled bowls and garnish with thin slices of radishes, cucumber, and/or scallions.

    Serves 8
