    Stew, Caribbean-Style Pork

    List of Ingredients

    2 teaspoons cooking oil
    12 ounces boneless lean pork, cut into cubes
    1 onion, chopped
    1 sweet red peppers, sliced
    1 clove garlic, minced
    1 (14-1/2 ounce)can beef broth
    1-3/4 cups water
    1 cup tomatoes, chopped
    1 tablespoon ginger root, grated
    1 teaspoon ground cumin
    1/4 teaspoon crushed red pepper
    3 plantains, peeled and cubed
    1 (15 ounce) can black beans, drained and rinsed
    3 cups hot cooked rice

    Recipe

    1. Heat oil in a large kettle or Dutch oven. Add pork and cook until browned. Remove pork from pan. In drippings cook onion, sweet pepper, and garlic for 5 minutes. Drain off fat. Return pork to pan.

    2. Add broth, water, tomatoes, ginger root, cumin, and crushed red pepper. Bring to boiling, reduce heat. Simmer covered for 45 minutes.

    3. Add plantains and black beans. Simmer, covered, for 15 minutes. Serve with rice. Serves 6
