    Seafood-Tortellini Soup

     3/4 pound unpeeled, medium-size fresh shrimp
     1 (16-ounce) can reduced-fat, reduced-sodium chicken broth
     1 (15 1/4-ounce) can no-salt-added whole kernel corn, drained
     1 (14 1/2-ounce) can diced tomatoes with basil, garlic and oregano, undrained
     1 cup water
     1/2 cup dry white wine or chicken broth
     1 medium zucchini, unpeeled and thinly sliced
     1/2 teaspoon pepper
     1 (9-ounce) package refrigerated cheese tortellini or ravioli
     1 (14 1/ 2-ounce) can sliced carrots, drained
     1/4 cup chopped fresh parsley

    Recipe



    Peel shrimp, and devein, if desired. Set aside.

    Bring chicken broth and next 6 ingredients to a boil in a large saucepan over medium heat. Boil 1 minute. Add tortellini, and boil 5 more minutes.

    Stir in shrimp and carrots; reduce heat, and simmer about 5 minutes or until shrimp turn pink.

    Stir in parsley; serve immediately.

    Makes 4 to 6 servings
