    Split Green Pea Soup with Ham


    List of Ingredients


    • 1 ham bone
    • 8 cups water
    • 1 package (1 lb) dried split green peas
    • 4 medium carrots, pared and diced
    • 1 medium onion, chopped (1/2 cup)
    • 1 bay leaf
    • Salt and pepper to taste
    • Water, milk or tomato juice to thin soup if necessary


    Instructions


    1. Combine all ingredients in a large kettle. Cover and simmer 1 hour, or until peas are soft.
    2. Take out ham bone and cut off meat and add to soup. Taste and season with salt and pepper.
    3. Thin with water, milk or tomato juice if necessary


    Final Comments


    Makes 6-8 servings
