1. Preheat the oven to 400 degrees F. Scrub the potatoes, do not peel. Cut them into wedges.
2. Place the potatoes, paprika, mustard powder, flour, salt and pepper in a plastic bag. Shake well to evenly coat the potatoes.
3. Heat the oil in the baking dish for 2 to 3 minutes before adding the wedges.
4. Bake, uncovered, at 400 degrees F. for 20 to 30 minutes or until the wedges are golden brown and crunchy. Turn once during cooking. Serve with light sour cream if desired.
