    CHERRY PINEAPPLE SQUARES

    List of Ingredients


    • 1-1/2 cups all-purpose flour
    • 3 Tbsp. icing sugar
    • 3/4 cup butter
    • Filling:
    • 1 cup crushed pineapple with juice
    • 1 small jar maraschino cherries, drained and cut up fine
    • 1/2 cup white sugar
    • 2 Tbsp. cornstarch dissolved in a little water
    • 1/2 cup fine coconut
    • 1 tsp. almond flavouring
    • Topping:
    • 3 egg whites, beaten stiff
    • 5 Tbsp. white sugar


    Instructions


    1. Mix with hands and press into an 8”square pan. Bake for 10 to 12 minutes in a 350 degree oven.
      Filling: Put pineapple, cherries, and white sugar in top of double boiler and when hot add cornstarch mixture. Cook until thick and clear. Add coconut and almond flavouring and spread on top of first mixture.
      Topping Beat as for meringue and spread on top of filling. Bake slowly for 20 minutes in 300 degree oven.
