    • 1/4 cup shortening, margarine or butter
    • 1 Tbsp. grated lemon peel
    • 1/2 tsp. salt
    • 3 cups sifted icing sugar
    • 1 Tbsp. lemon juice
    • 3 Tbsp. water
    • yellow food colouring, as desired


    Instructions


    1. Combine shortening, salt, lemon peel, colouring, and 1 cup of the icing sugar. Add lemon juice, water, and remaining sugar alternately. Mix until smooth. Add sugar (sifted, if lumpy) alternately with milk and vanilla, mixing until smooth.
