    List of Ingredients


    • Crust:
    • 1 cup sifted flour
    • 1 tsp. grated lemon peel
    • 1 slightly beaten egg yolk
    • 1/4 cup sugar
    • 1/3 cup butter or margarine
    • 1/4 tsp. vanilla
    • Filling:
    • 5 x 8 oz. pkg. cream cheese
    • 1/4 tsp. vanilla
    • 3/4 tsp. lemon peel
    • 1-3/4 cups sugar
    • 3 Tbsp. flour
    • 1/4 tsp. salt
    • 4-5 eggs (1 cup)
    • 2 egg yolks
    • 1/4 cup whipping cream


    Instructions


    1. Crust Combine the first three ingredients. Cut in butter until mixture is crumbly. Add egg yolks and vanilla. Blend thoroughly. Pat 1/3 of dough on bottom of springform pan, sides removed. Bake in 400 oven about 8 minutes or until golden. Cool. Attach sides to bottom; grease sides with butter and pat remaining dough on sides to height of 1-3/4 inches.
      Filling: Let cream cheese stand at room temperature, then beat until creamy, then add vanilla and lemon peel. Mix next three ingredients well, then gradually blend into cream cheese mixture. Add eggs and egg yolks, one at a time, beat after each addition just to blend. Gently stir in whipping cream. Turn into crust lined pan and bake at 450 for 12 minutes; reduce heat to 300 and continue baking for 55 minutes. Remove from oven. Cool. Loosen sides at end of 1 hour. Cool 2 hours longer. Glaze with fruit or pie filling.
