    LEMON-SAUCED PUDDING

    Recipe Introduction


    Mix dry ingredients. Cut in shortening. Add wet ingredients. Spread batter into an 8” square pan. Combine sugar, water, lemon juice and rind. And pour carefully over the top of the batter. Do not stir. Bake at 350 degrees for 40-45 minutes. Spoon into serving dishes, cake side down. Serve with whipped cream, if desired.


    List of Ingredients


    • Cake batter:
    • 1-1/2 cups all-purpose flour
    • 3/4 cup sugar
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/4 cup shortening
    • 3/4 cup milk
    • 1 egg
    • Lemon Sauce:
    • 1 cup sugar
    • 1 cup boiling water
    • 1/3 cup lemon juice
    • 2 teaspoons grated lemon rind
