OLD-FASHIONED RICE PUDDING

List of Ingredients
- 3/4 cup water
- 1/4 tsp. salt
- 3/4 cups instant rice
- 1-1/4 cups milk
- 1 egg yolk, slightly beaten
- 1/3 cup sugar
- 1/3 cup raisins (more is better)
- 1/8 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1 Tbsp. butter
Instructions
- Bring water and salt to a boil; stir in rice and cover. Remove from heat and let stand for 5 minutes. Blend milk and egg yolk together, then stir into rice. Add sugar, raisins, cinnamon, nutmeg and butter; mix well and bring to boil; stirring constantly. Cover and remove from heat; let stand for 1 hour. Stir just before serving. Serve warm or cold. Makes 4 servings.
