    CHEESY SAUSAGE-SPINACH PIE

    • crust for 2-crust 10 inch pie
    • 1 lb. sausage meat, preferably mild Italian
    • 6 eggs
    • 1-1/2 pkg. frozen chopped spinach, thawed
    • 1 lb. grated mozzarella cheese
    • 2/3 cup cottage cheese
    • 1/2 tsp. salt
    • 1/8 tsp. pepper
    • 1/8 tsp. garlic powder


    Instructions


    1. Line pie plate with crust; wrap remaining pastry until ready to use. Remove sausage from casing and brown well, stirring. Drain well. Combine eggs (reserving one yolk), meat spinach (squeezed to remove all water), cheeses and spices; spoon into pie plate, mounding slightly in centre. Roll remaining pastry; cover pie – trim, leaving 1/2 inch overhang. Press around rim to make edge stand up. Make hole in the centre and cut slits with sharp knife. Decorate top with pastry leaves made from pastry scraps. Beat reserved egg yolk with 1 Tbsp. water and brush on pie. Bake at 375 for 1 1/4 hour. Let stand 10 minutes before cutting.
