CORNMEAL PANCAKES

- 1 1/3 cup cornmeal
- 2/3 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1 1/2 cups milk
- 3 tsp. lemon juice
- 6 tsp. melted shortening
Instructions
- Sift dry ingredients together. Beat eggs; add milk, lemon juice, and shortening, then add to dry ingredients gradually, beating until smooth. Pour batter into a jug. Heat and grease frying pan and pour in enough batter to make a pancake about 5 inches in diameter. Yield: 24 pancakes.
