List of Ingredients
- CAKE ROLL INGREDIENTS:
- 3 eggs
- 2/3 cup pumpkin
- 1 cup sugar
- 1 Tsp baking soda
- 3/4 cup flour
- FILLING INGREDIENTS:
- 8 oz pkg. cream cheese
- 2 TBSP softened butter or margarine
- 3/4 Tsp vanilla
- 1 cup powdered sugar
- OTHER:
- 1/2 cup chopped walnuts or pecans
Instructions
- Mix and pour bread ingredients onto greased and waxed papered cookie sheet. Sprinkle with chopped walnuts. Bake at 375 degrees for 10-15 minutes. Be careful not to overbake.
- After baking, turn bread over onto dry, clean towel sprinkled with sugar. Peel off wax paper and roll. Cool completely.
- Prepare filling mixture. When bread is cooled, very carefully unroll and fill. Reroll and refrigerate until ready to serve.
Final Comments
The side from which you roll the bread should depend on how big around you would like the roll and how many you would like to serve.
Also, you can use any size cookie sheet, from a 9 x 13 to an 11 x 17 to make your Pumpkin Roll even bigger.
