    Apple-Spice Hi-rise Muffins

    List of Ingredients


    • 3 cups all purpose flour
    • 2 tsp baking powder
    • 1 tsp baking soda
    • 2 tsp pumpkin spice or 1 tsp cinnamon,
    • 1/2 tsp ginger
    • 1/4 tsp each of nutmeg and allspice
    • 1/2 tsp salt
    • 1-1/2 cups brown sugar
    • 2 eggs
    • 1 cup buttermilk or plain yogurt
    • 1/3 cup vegetable oil
    • 3 apples, peeled and finely chopped
    • 1 cup chopped nuts (optional)


    Instructions


    1. Preheat oven to 400F. Grease 12 muffin cups or line with paper cups.

    2. Using a fork stir flour with baking powder, baking soda, spices, salt and sugar in a large mixing bowl.

    3. Whisk egg in a medium-size bowl with buttermilk  and oil.

    4. Pour into flour mixture. Stir until just combined. Stir in apples and nuts.

    5. Spoon batter into muffin cups. Cups will be very full with batter heaped in middle. You may now sprinkle a mixture of sugar-cinnamon on top of each muffin before baking.

    6. Bake in center of preheated oven until golden and a cake tester inserted into middle comes out clean, about 15 to 17 minutes.

    7. Cool muffins in cups for 5 minutes, then turn out onto a cooling rack.



    Final Comments


    This recipe gave me 19 muffins made in the Jumbo-size paper cups. Very moist and tender.
