    Recipe Introduction


    This may take a while to prepare, but the end result is worth it all.


    List of Ingredients


    • 2 Chicken Breasts, skinned and deboned
    • 1 TBSP dry bread crumbs
    • 1 TBSP grated Parmesan Cheese
    • 2 TBSP mild green chili, chopped
    • 1/2 Tsp. chili powder
    • 1 egg beaten
    • 1 oz. Monterey Jack cheese, cut into 2 slices, approx. 3 X 1


    Instructions


    1. Preheat oven at 375°.
    2. Pound chicken breasts with a hammer (cleaver) to about 1/4" thick.
    3. On each breast, place a TBSP of the chilis and a slice of Monterey Jack cheese.
    4. Roll up and place seam down in a greased baking dish.
    5. Brush with beaten egg.
    6. Mix together bread crumbs, parmesan cheese and chili powder, and sprinkle over chicken rolls, patting into place to form a crust.
    7. Bake about 20-25 minutes. Cheese inside will be melted and the crust nicely browned.
    8. Serves 2.


    Final Comments


    Simply delicious. Double or Triple as you wish, augmenting the ingredient portions accordingly.
