Cheese Fondue
List of Ingredients
1/3 lb. cheese per person
1/3 cup white wine per 1/3 lb. cheese (*You may want to increase/decrease this amount to meet your taste)
*Recommended cheeses: 1/2 good Swiss Cheese, and 1/2 either Gruyere or Fontina. Also, Smokey Swiss is great...
Sliced or crushed clove of garlic
1-1/2 to 2 T. flour
1/2 t.paprika
1/4 t. nutmeg
Sweet french bread, cut into chunks/cubes.
Fruit cut into cubes, such as apples.
*optional: pinch of cayenne, to taste (happened on this ingredient by mistake when I grabbed the cayenne instead of the paprika once! Wow, was it hot!!! But found that a little was really quite palatable...)
Recipe
Cut cheese into small cubes, about 1/2" square.
Shake in a bag with the flour, paprika, nutmeg (optional: cayenne).
Put garlic clove into fondue pot. Add wine and heat until just about boiling (small bubbles start rising).
Remove the garlic and add cheese by handfuls, stirring until all is melted.
*** Spear bread cubes and/or fruit such as apple chunks with fondue forks, swirl in fondue to coat and enjoy!
