    1/2 cup butter -- softened
    1 cup powdered sugar
    2 eggs
    grated lemon zest from 1 lemon
    2 cups flour -- sifted
    2 teaspoons baking powder
    1/4 cup milk
    3 apples -- peeled and thinly sliced
    2/3 cup chopped blanched almonds
    granulated sugar -- to taste

    Preheat oven to 350 degrees F.

    Cream butter and powder sugar until mixture is fluffy. Beat in eggs, one at a time, then stir in lemon zest. Sift flour with baking powder. Add flour to batter, alternately with milk. Spread batter in buttered and floured 9-inch square pan. Arrange apple slices over batter in overlapping rows. Sprinkle with almonds. Sprinkle with sugar; the amount depends on the sweetness of the apples. Bake 50 minutes or until cake tests done. Serve with sweetened whipped cream. Serves 6 to 8.
