    Etta's Chocolate Mayonnaise Cake

    2 cups flour
    1/4 cup unsweetened cocoa
    2 1/4 cups Splenda Granular
    2 teaspoons baking soda
    1 cup fat-free mayonnaise
    3/4 cup lukewarm water
    2 teaspoons vanilla
    1 tablespoon light margarine
    1 teaspoon light margarine
    1 square unsweetened chocolate
    2 tablespoons fat-free sour cream

    Preheat oven to 325 degrees F. Spray a 9 x 9-inch baking pan with butter flavored nonstick butter spray. In a large bowl, combine flour, cocoa, 1 cup Splenda and baking soda. In a small bowl, combine mayonnaise, water and 1 teaspoon vanilla. Add mayonnaise mixture to flour mixture. Mix gently just to combine. Spread batter into prepared pan. Bake 30 minutes. Place cake on a rack to cool.

    Meanwhile, in a medium saucepan, melt margarine and chocolate. Remove from heat and stir in sour cream. Add remaining 1 1/4 cups Splenda and remaining 1 teaspoon vanilla. Mix well to combine. Evenly pour warm glaze over top of cooled cake. Cut into 8 servings.
