    Grandma Mitchell's Strawberry Pie

    My grandmother probably found this recipe in an old Betty Crocker cookbook, but it is truly her own as she wrote "add butter the size of a walnut" and to "soak the berries". I've updated the recipe to use the standard measurement of 1 1/2 tablespoons butter. Copyright Mary Ash

    List of Ingredients

    °° 1 9 inch baked pie shell
    °°3 cups strawberries, hulled, washed and drained
    °° 1 cup water
    °° 3/4 cup sugar
    °° 2 tablespoons cornstarch
    °°1 1/2 tablespoons butter

    1) Fill pie shell with 2 cups of choice berries.

    2) Crush remaining 1 cup of berries. Soak them with the water for 5 minutes, strain and reserve 1 cup juice.

    3) Combine sugar with the cornstarch; stir into berry juice and cook for 3 minutes or until thick and clear.

    4) Add butter. Cool slightly and pour over fruit to glaze berries in pie shell.

    5) Chill. Garnish with whipped cream and strawberries, if desired.

    Tip: Use a pastry blender to crush the berries. Using a food processor tends to make the berries too watery.
