    Lunchbox Cake

    2 cups sugar -- divided
    2 teaspoons baking soda
    2 cups flour
    2 eggs -- slightly beaten
    17 ounces fruit cocktail -- undrained
    3/4 cup chopped nuts

    In a mixing, combine 1 1/2 cups sugar, baking soda and flour. Add eggs and undrained fruit cocktail. Mix well and pour into greased 9 x 13-inch baking pan.Sprinkle remaining 1/2 cup sugar evenly over top. Sprinkle nuts over sugar. Bake at 300 degrees F for 60 minutes or until cake tests done.
